2026 Olio Nuovo - Pre-order Availability
After two challenging seasons our 2026 harvest is looking better, thanks to late spring rains leading up to flowering and fruit set.Ā Olio Nuovo is a limited seasonal release produced from olives picked while still green and pressed immediately. Because early-harvest green olives yield significantly less oil per kilogram, quantities are always limited.

Please note: An order limit of one 15L cask or 20L tin per customer applies this season so we can share the harvest fairly. Pre-orders for these sizes have now sold out. You can subscribe for back-in-stock notifications in case additional oil is available at harvest (once pre-orders have been filled).


What is Olio Nuovo? Harvest and pressing information
Although all of our olive oils are first cold pressed (we only do a first pressing), at the start of each harvest season we press and bottle our Olio Nuovo (first harvest) - our labour of love. Olio Nuovo "new oil" is a special limited release of unfiltered cold pressed organic extra virgin olive oil from the first olives harvested each season (mainly green olives). Hand selected olives including Verdale, Mission, and Benito varieties are picked, cold pressed, unfiltered and bottled without delay while still cloudy - this is as fresh as you can get!

The oil flavour profile is vibrant with medium intensity, complex fruitiness, green herbaceous notes and a peppery finish. The oil is rich in polyphenols (antioxidants) typically ranging between 250 and 350 mg/kg (ppm). This limited release oil is popular and highly sought after at harvest time for its intense aroma and health benefits - experience the vibrant aroma and enjoy the intense flavours of this oil while it is fresh.

Why Olio Nuovo is Highly Prized
Olio Nuovo is a once-a-year tradition, bottled straight from the press to capture the grove at its most vibrant. To achieve its signature peppery flavor and high antioxidant levels, we harvest the olives while they are still green. At this stage, they yield roughly half the oil of a ripe olive, meaning we must grow and press nearly double the fruit for every litre produced.Ā For this reason, most producers limit Olio Nuovo to bottles, exceeding $100 per litre. While we need to ensure our pricing reflects the reality of these low yields, we strive to keep our certified organic oil more accessible than most first-harvest releases, with bulk options available when the crop allows.


Why is fresh oil cloudy?
Olive oil this fresh and unfiltered is cloudy due to fine particles of olive flesh suspended in the oil.Ā These particles are high in antioxidants and contribute to the vibrant flavour of freshly pressed oil. Because this oil is bottled straight from the press the settling process that normally happens in our tanks will occur in your bottle or tin, so expect to find some sediment at the bottom.Ā We recommend enjoying as much oil as possible while it's fresh and cloudy. Drizzle over warm, crusty bread, fresh salads, or grilled vegetables to lift your dishes with its distinctive flavour.
